I wanted to finish my quilt top yesterday, but it didn’t happen.
I might get to it today, but by the time Dog-Free Monday rolls around, I usually have a lot of stupid housework that comes first. I know we are all Doing Our Best™ and that not vacuuming my rugs for another couple of days won’t kill anyone, but I am also really trying not to get too Lord of the Flies over here. When the people who clean my house come back (when, when will this blessed day be here?) they are going to be like “Did a traveling circus live here? Like, the clowns and animals part?” and then they will (deservedly) take all my money.
I am paying them during this hell time, btw. I’m not trying to score Woke Points or whatever but I am able to do it, so I’m doing it.
Much as it pains me to admit it, I think I might have accidentally fallen a little bit in love with the puppy this weekend. She is still very annoying but I couldn’t help it and I like her now. Whoops!
Yesterday I mentioned we’d be having skillet-baked ziti for dinner. I got this recipe from my beloved Best 30-Minute Recipe cookbook and have made it, oh, a hundred times or more. You really don’t need a lot to make this: pasta, garlic, pepper flakes, canned tomatoes, parmesan. It also calls for heavy cream and mozzarella but I never use both of these things. Last night I “made” Italian sausage by adding seasoning to ground pork and added that as well. It’s so good and really forgiving. I look forward to eating it again today and possibly tomorrow.
My Wine.com order is arriving today. I am not sure I shared this here already but the last time they delivered to me, the FedEx driver told me through our storm door that he would just leave the box on the porch so we didn’t have to interact. I asked if he needed to see ID and he said “Haha! I believe you’re over 21!” THANKS DUDE. Throw a lady a bone next time. “Oh yes blushing ingenue! Please prove you are legal!” Is that so hard?
Tonight I must cook a whole chicken because I thawed it over the weekend. I can’t believe this will be our first Pandemic Chicken! Usually we roast chickens like whoa over here, but tonight I might try doing it in the Instant Pot. Truth be told, due to our shitty oven and weak-ass exhaust fan, I kinda hate roasting chickens. The kitchen gets too smoky and the smell of roasted chicken, so lovely during the cooking stage, is less appealing in your hair 24 hours later.
Now I must get on with my day, which is mostly a race against time until I have to go pick up my dogs. Beat The Clock is my least favorite game!
